Each knife in the Morinoki series is lightweight and handmade with a design that balances functionality and warmth. The hard cheese knife features a spade-shaped blade, perfect for cutting parmesan, gouda or gruyere. Serated and designed with a gentle curve, the blade of the soft cheese knife is great for brie, chevre or stilton. The stainless steel blade is set in a wood handle made out of Japanese zelkova, a tree often enjoyed as a bonsai. Detailed attention is given to creating the handle’s smooth, rectangular shape to ensurea comfortable grip.

Founded in 1980, the Shizu Hamono cutlery factory is located in Seki, Japan, a center of knife production for almost a millennium. The craftspeople at Shizu Hamono are focused on manufacturing traditional knives that explore innovative materials, technologies and designs.
